In Finland, a restaurant's own-check plan (omavalvonta) is the day-to-day HACCP practice, and the Oiva inspection system publishes how well it is followed. The plan stays yours. What Orbis changes is the record-keeping: the evidence that the checks happened is created as part of the work.
Food safety and waste are the same problem
